They are more flavorful, a bit “darker” and “wilder” tasting than cultivated American blueberries – and a little more tart. Bilberry is a very popular flavor. Real blueberries taste bland and watery when compared to bilberries. This is a flavor that stands out in recipes. It will overpower weak fruit flavors, but it’s a perfect one to use with other dark fruits and berries, like Black Cherry, Pomegranate, and Blackcurrant. Use a very light touch (try 0.5% first) in bakery recipes to add blueberry flavor. Extra tasty with raspberry (many European candies use the two together). This combination is great with Black Tea. Try with FA Brandy for liqueur flavor – or with Red Wine in a baked-fruit-dessert recipe.

This flavor has an earthy / musky taste. The taste is very unique and could be very useful in different recipes. It's best used with other flavors but as a standalone I recommend 4%.

Used in low percentage like 1 or 2 it brings a nice deep,rich,very ripe blueberry flavor to my recipes. It brings depth to other blueberry flavors. I made a banana cream pie the other day that was a little boring so I added 1 % billberry and it really brought it to life. I like it.
